Rosato Capitel Alto Sur Lie Villa San Carlo 2021 is mainly obtained from native Corvina and Corvinone grapes harvested in the cool early hours of the day and cooled with the use of dry ice. Immediate destemming and direct soft pressing. Cold decanting for 24 hours is followed by slow fermentation for about two weeks at 14 ° C. After aging in steel tanks and daily bâttonage for about 4 months, the wine is bottled with a residual sugar of about 10 g / l. Thanks to the activity of the yeasts, a rapid refermentation in the bottle takes place which makes the wine sparkling (about 2 atm of pressure). The wine is not filtered.
